Create a separate worflow for docs

With the docs, daily updates of this are pretty noisy 😅

Hello :)
I think we can move the docs updater to run weekly, as it currently runs daily. We can split the workflow into two separate workflows, or modify the workflow to ignore the comments in some way, or create an auto-merger if the changes are just comments.

This should solve the annoying PRS.
