CLOUDP-310820: Resolve post 1.0.0 to do items

Summary

Now that we have MCK 1.0.0 artifacts out, this pull request removes conditional logic that was previously gated by the release of version 1.0.0.

This is ready for review, but one of the OLM tests is failing because MCK OLM 1.0.0 bundle refers to 3 image SHAs that were garbage collected.

Once OLM release is resolved (e.g. new release is published or old corrected, if it is possible) - restarting the job without changes in the PR should result in a green job.
